The Istituto Superiore di Gastronomia di Jesi, also
called ItalCook and founded by Slow Food Italy and the Commune of Jesi,
runs various training courses in the gastronomic field. In particular,
the school aims to educate foreign chefs who wish to study Italian
cuisine in its truest expression, region by region. In four years of
operation, the school has trained over a hundred young chefs.
Our courses include visits to local food producers and daily hands-on
experience in the kitchen: dishes featuring the bounty of both land and
sea, handmade pastas, wine and olive oil tastings and products of the
Slow Food Presidia. Students learn the dishes and recipes of the
traditions from the all over the country

ItalCook¡¦s chef-instructors teach a three-week long
course, from August 28 to September 17, 2006, featuring:
Typical and traditional cuisine
of the Italian regions
Handmade pasta and dried pasta
Meat preparation
Cured meats and cheeses
Vegetables
Traditional desserts
Excellent wines and olive oil

Course fee: £á 3,800.00.
The fee covers room and board in
a double or triple room, insurance, cooking classes, wine and olive oil
tasting classes, teaching materials and recipes in Italian and English,
work clothing, visits to producers and a certificate for course
completion.
Single room supplement: £á 500.00.
A deposit of £á 800.00 is
required for course reservation
